I dont have a free carboy but I have many open ale pales (buckets). Is there a really important reason why I cant use the bucket? Im guessing it has something to do with lid-blowoffs during crazy fermentation?

You can use a bucket for Apfelwein. I'd go with a 5 gallon, as opposed to the 6.5 gallon just to limit the headspace. Blow-off is not a factor with apfelwein, normally just a light bubbling on the top is all you'll get (no big kruesen).
