So I have 3 pounds of light DME, 1 pound honey malt and 2 OZ Spalt 4.5% AA. I am going to use these in a 3 gallon batch to pour on top of a yeast cake(white labs German ale) I have.
I was going to do a full boil of 3.5 gallons of h2o. First question is how much of the honey malt should I steep and for how long? What about the hops schedule? I thought maybe 1 oz for 60 minutes and another 1 oz for aroma? I thought of primming the bottles with honey. Kind of a light honey ale or blonde style summer beer. Be great if someone could crunch the numbers for me and give any input. Thanks - Dirk
 
Thanks, I have used that spreadsheet before. I don't think I saw honey malt on their grain list. - Dirk
