After you let bottles condition for 3 weeks around 70 degrees, do you need to put them in the fridge? Or can you leave them around 70 until you want to drink em. Thanks, Derek.

You can just leave them till you are ready. Just remember you need to chill for a couple of days to force Co2 into suspension for good carbonation.

Put them in the fridge for 3+ days before drinking them. Otherwise you'll get more foam than brew... I tend to go at least 4 to 5 days in the fridge before opening one up.

The extra time also allows the sediment to really compact in the bottom of the bottle. Makes for easier, cleaner, more complete pours.
