I am going to purchase the Dunkel-kit from Midwest (going kit here because it's cheap and it will be my first true all-grain as well as my first true wheat beer), and they recommend Wyeast Bavarian wheat 3056.....so should I use that or go with the Weihenstephan 3068 instead? can someone briefly outline the differences between the two yeast strains?

(I'm hoping it will turn out something similar to Franziskaner Dunkel, if one of these yeasts would be better suited for this I don't know....)

...and thanks for your help! :tank:

Check out Wyeast's site for what they say about the strains. I haven't made a dunkel yet, but I have used the 3068. It's a pretty classic hefe yeast with a strong esther profile.

I have used the 3068 for my Dunkelweizens and Hefe-weizens.
I love that yeast. I don't think you can go wrong with either of the Wyeast choices.

If you can do a split batch and compare them, it might be worth it. :)
