I am planning on making some dry mead and barley wine soon. I know with these you want them to age in the bottle a good while before you drink them. When aging like this, should I refridgerate them or is it ok to leave them at room temperature?
 
Room temp is preferable. Beer will age at any temp, but at different rates of speed. Around 60 degrees is considered the norm, though 50 would be ideal for long term aging (multiple years).
