I brewed this weekend an American Wheat Ale and it turn out to be on the spicy side bc of the hops. I usually make it with Amarillo and citra but my LHBS was out. This time I used centennial and galena. Although it should be a great beer when its finish, I know it will not be even close to the original. The original is very close to a gumballhead clone, that finishes a bit sweet 1.014 FG but with a 41 IBU that balances it all. I am a great fan of apricot ales, but have never brewed one before. I like magic hat #9 and pyramid apricot ale and DFH Aprihop. DFH is my favorite bc of the IBU. Witch way is better to achieve a nice subtle apricot flavor? Either use purée or extract and how much of it? Beer is on second day of fermentation using a WL Kolsch yeast.
