I have a 20' stick of copper tubing left from an A/C install, and was wondering if it could be used for piping up my syste to the pumps, HERMS cooler etc? Otherwise I spent $140 on some copper I cant use. I am mainly worried about taste issues, but my counter flow chiller is copper and I am curious.

Use it!
if it's like my AC line the low pressure side (big pipe) is pretty heavy and won't crush too easily.
As for taste, using it in contact with hot wort will keep it shiny clean (slowly corrodes the copper) but then yeast require some Cu as a micronutrient.
When you get around to soldering it you might want to use the "lead free" stuff. But I bet you that the plumbers didn't when the put the pipes in your house.
