So, I brewed up my second batch on Friday, and I am calling it a mystery because I just improvised and put some pretty random stuff in there. Here it is, please don't hold back on your critiques, let em rip. Thanks.

GF Mystery (5 gal)

.5 lbs Toasted Buckwheat Groat (Steeped from 100 F until boil)

7 lbs Tapioca Syrup (60 min.)
.5 lbs Dark Brown Sugar (30 min)
.5 lbs Rice Syrup Solids (30 min.)
1 Tbsp Irish Moss (20 min.)
6 oz Molasses (10 min.)

1 oz NZ Cascade Whole (60 min.)
.5 oz NZ Cascade Whole (30 min.)
.5 oz NZ Cascade Whole (5 min.)

2 packets Safale S-04

OG: 1.062
FG: ?
 
Sounds like some pretty hoppy sugar water with a bit of buckwheat? You should try the recipe section.
Not to say not to finish this off, it may turn out....kinda.

and just to note, Your Mead for the Holidaze is about 8 or 10 months late.

How was it going into the fermenter? Did you try the hydro?

The tapioca and buckwheat seem to suggested toasted potato like flavors.

The recipe section has next to nothing in the Gluten Free department

How was it going into the fermenter? Did you try the hydro?

Going into the fermenter it had a strong molasses smell, probably from the molasses AND dark brown sugar (tasted molasses-y), as well as aroma from the cascades. Hydro reading was 1.062 going into the fermenter.

So it's a spicy, hoppy, potato beer?.. Awesome :rockin:

Holidays 09 should be gooooood! I've already got a mead and a beer in the pipeline for them.

As far as GF brewing...I was mistakenly thinking there were several recipes there.
 
So.. I took a grav reading yesterday (1 week since brew day), and it is only down to 1.045 from 1.062 to start. My first brew had some problems with being slow too, so I pitched another packet of yeast, and it finished up. This time, I pitched two packets of safale s-04. I have seen in other GF recipes others just using normal dry yeast and no nutrients with good results, so I'm not sure whats going on. Any help?
