I'm looking to make a second attempt at a session saison (first one is in my recipe drop-down). I'm a big fan of Strisselspalt as a flavor/aroma hop in saisons, and recently I read a descriptor of the hop as having a black currant flavor/aroma, which I'd never noticed before, but if true I thought it would go well with the berries, stone fruit, and citrus of Belma.
Using Munich to enhance malt presence. Strisselspalt AA's are based on the last time I used the hop, but may need to be adjusted. BIAB with small grain bills tend to give me ridiculously high efficiency, usually around 83-87%.
So here's how it's looking:
6 gallons, BIAB, No-Chill
85% efficiency (small grain bill, BIAB)
5.5 lb Munich 10L
.25 oz Belma (12.1% AA, whole leaf) - FWH (calculated as 30 min addition)
.25 oz Belma - Cube hop (calculated as 20 min addition)
1 oz Strisselspalt (2.1% AA, pellet) - Cube hop (calculated as 20 min addition)
1 oz Belma - dry hop
1 oz Strisselspalt - dry hop
Wyeast 3711 French Saison
Mash: 152 F for 60 min
Mash-out: 170 F for 15 min
Boil: 60 min
per BrewTarget 2.0:
OG: 1.028
FG: 1.002
ABV: 3.4%
IBU: 15.7
SRM: 6.8
BU:GU: 0.57
