Difference between K Sorbate and Sodium Metabisulfate

So, I followed a mead recipe that called for Sodium Metabisulfate. The bottle says "to kill wild yeast..." so I added it, waited 2 days or thereabouts, and made the mead (it's racked to bottle and aging).

My question is: what's the difference between K sorbate and sodium metabisulfate? Other than the obvious chemical differences anyway.
