I made my first big beer Friday and to help with efficiency I put 8 gallons in the kettle instead of my usual 7. I just boiled it until I got down to 7 gallons and then started my hop schedule.
 
You got it, just boil until you hit your volume. There are certainly worse problems to have!
 
Boil it down or accept the larger volume. A refractometer reading or chilled hydrometer sample may be helpful in deciding which is the best course of action. If you decide not to boil off the excess volume, and it won't fit into the fermenter, freeze the excess, and use it later for a yeast starter.
