I made a berlinerwiese about a month ago and I plan on aging it for another 4 months or so. I would like to get it off the yeast cake but it will only come out to 4 gallons or perhaps a bit more. I made a smaller batch and have it fermenting in a 5 gallon plastic carboy now. I have read the posts on doing secondaries with too much headspace and I am concerned about it since it will be there for so long. I was thinking of getting a Lowes 5 gallon bucket. Any suggestions?

I know too much headspace can contribute to oxidation. Unless you purge with CO2. But I've used a Lowes 5 gallon bucket for a strawberry wine once(4 gal batch). It worked fine just make sure it's foodgrade. HDPE #2 plastic and put an airlock on it cause the lid seals but is a lot easier to get off than my Ale Pale.
