Hi, I'm a long-time lurker, thought I'd finally make a post here to see if anyone had any thoughts on my partigyle plans. It will be my first time doing a partigyle, and my first time doing a step mash. I think the first beer will work out, but given the mash schedule, I'm not sure what to expect for the second runnings.

The first is based on the Delirum Tremens clone discussed on Northern Brewer. The second is something I threw together after looking through a bunch of recipes. I would have gone for a Belgian Pale except for two things: my brew partner (my dad) wants an IPA and his fermenter will be occupied for awhile. He also has a WLP051 (California Ale V) culture. So I made an IPA for it. Belgian-American because it is Belgian influenced in terms of grains and that it will be a bit dryer than most IPAs. But not a true Belgian IPA without Belgian yeast.

Mash: 22 lbs Pilsnermalt
15 min at 130
45 min at 144
30 min at 158
mash out at 170

Add steeping grains: .25 lbs each Caramunich and Caravienne
Batch sparge at 168

Estimated first runnings: 5.25 gal at 1.067
Estimated second runnings: 5.25 gal at 1.045 (w/ out the specialty grains, so it should be a bit higher)

Delirium Tremens Clone
90 minute boil
1.5 lbs Clear Candi Syrup
1 oz Stryian Goldings (60 min)
0.5 oz Saaz (10 min)
0.5 oz Saaz (flameout)
12 g Coriander (10)
4 g Ginger (10)
4 g Seeds of Paradise (10)
1 Whirlfloc tablet
1 Yeast nutrient

Top back up to 5.25 gal
Ferment with Wyeast 1388 starter
Start at 67, ramp to 75
1 month primary, 2 months secondary
Repitch yeast before bottling at 4 vols

OG: 1.074
FG: 1.008
ABV: 8.6%
IBUs: 25.7
SRM: 4.3


Belgian-American IPA
90 minute boil
0.5 lbs Clear Candi Syrup
1.75 lbs Golden Light DME
0.5 oz Cascade (90 min)
0.5 oz Centennial (60)
0.5 oz Summit (20)
0.75 oz Cascade (15)
0.75 oz Centennial (15)
0.5 oz Amarillo (15)
0.5 oz Amarillo (flameout)
0.5 oz Summit (flameout)
1 Whirlfloc tablet
1 Yeast nutrient

Top back up to 5.25 gal
Ferment with WLP051 culture at 67-68
Dry hop with 0.75 oz Cascade, 0.75 oz Centennial, 1 oz Amarillo
Primary for 3 weeks
Bottle at 3 vols

OG: 1.064
FG: 1.013
ABV: 6.6%
IBUs: 67
SRM: 6.3
