May be brewing my first stout eva , tomorrow and came to realize I only have Safale S04 yeast on hand (used my Notti to make other silly things..)

Will it work within the style, and should I take steps to "optimize" the fermentation?

Just rehydrate the yeasties and HAHB?

Should be OK as long as the OG isn't too big. 70% attenuation will be less noticable on a 1040 beer than on a 1060, you know?

You don't even have to rehydrate, but I'd mash around 150-151F with that yeast. I usually use Nottingham and mash at 152-153F. Remember to aerate well also. It won't be "dry" if you don't mash lower...
