You can use any ale yeast and it will turn out great. I think liquid yeast results in a little better quality at the finish. But, it cost a lot more. S-05 is a nice dry yeast.

Nottingham is ok, but it ferments to fast and does not clean up after itself well.
 
I usually stick with liquid yeast as I just like them better so my opinion may be a little skewed, I would use either Belgian Wit Ale WLP400 or Wyeast Belgian Witbier 3944.
