campden tablets question

I have never really used campden tablets; but as my user name suggests I am currently working on some mead.

My question is If my mead turns out too dry and I want to back sweeten the mead; will the campden [potassium] tablets work, or will its potency eventually wear off and it will re-start the fermentation?
 
To my knowledge campden will not stabilize a brew on its own but when used in conjunction with a sorbate all fermentation should be prevented from that point.
