Best Cyser Yeast?

I will be making a cyser soon using 5 gallons of honey and 10 gallons of cider.
My question is what yeast should I use to yield an abv of about 10%-14%?
I really dont care if it is super strong or not, all I want is a good taste and a clear finished product.
Also, does my receipe sound feasable?

The yeast don't determine the ABV, the amount of sugar does. A gallon of honey is about 12 pounds and is the amount used in a typical 5 gallon batch of mead.

Nothing on the planet will ferment this.
