I made a partial mash pumpkin ale recently and the pumpkin does add flavor. I used a teaspoon of spice at flameout and another 3/4 teaspooon in the fermentor after a week.

Huge pumpkin pie & graham crust flavor. I steeped 4# of pumpkin puree in a 10 gallon batch for the last 5 minutes of the boil. Used a BIAB sack to do this. Cheap & easy.
