I brewed a batch of stout for 7 days in the primary before bottling (yes, I know I bottled it far too early), the airlock stopped bubbling after 3 days, SG remained constant for 2 days. I added 2 carbonation drops per 750ml bottle and after 2 1/2 weeks bottle conditioning it has a nice head and is properly carbonated although it is not gassy, and it tastes pretty good. Since I bottled it too early, is it worth conditioning for another month or 2 or should I just drink it all soon and start another batch?

It is your beer so drink it if you want.

I find myself that my beers tend to get better after six weeks in the bottles. I ferment for two weeks before bottling.

You might drink some now, some in a bit -- but hold off at least a few bottles for a couple of months to find out if those are the best of the batch (they likely will be).

By the way, bottle bombs are no joke. Patience, grasshopper.
