Can I keg the beer and hit it with co2 and bleed the keg a couple of times then just put the keg in cold storage or does it have to be attached to the co2? I know it won't carbonate unless I prime it, but can I just store it like this until I am ready to hook it up to carbonate?

Sure, like you said, hit it with CO2 and purge it numerous times. Set it somewhere cool, no worries.
