I tried something a little different. Currently I have the two whites running one to 8 one to 9. The red to 10 with a jump from 7 to 10. With this I no longer get uuuu but instead 560 or so degree c. When I warm the probe it seems to increase the correct amount of degrees. Just reads really high. Do I have something hooked wrong? Missing anything?
 
Got it! I missed the part about setting the input on another post I was reading that gave me the info on the wires.
