I am bottling my RIS (est. 8.8% alcohol) this weekend. I made it the last week of July, sat it in primary for 4 weeks and been in secondary ever since. The original yeast is Wyeast 1728, and the current temp is 60.

Can I just transfer to the bottling bucket or will I need to pitch more yeast then bottle? Also, if I did pitch more yeast (US-05) wouldn't that bring down the FG more?

Thanks

Hmmm hard to say. You are pushing the limits of wonderness US-05, but, I think if you added normal amounts of priming sugar, and waited enough time for that big beer to age, it would carbonate. I recently just pumped out a 1.110 IIPA that finished at 1.020 roughly, using US-05. She is a little sweet but it is still carbing in bottles non the less. Gonna be a while for this beezy..... Good Luck....
