Brewing An american Barley wine tomorrow. I have some new hops I have never tried..(Sterling, Summit, Sorachi Ace, Pacific Gem) If anyone wants to give input on which hop they would use to best adjust this hopbill it would be great! I am shooting for 100 IBU's. Starting volume 7 gal, 90 minute boil, 5.5 finished gallons @ 1.098 ~1.1. Here is the hops that I have:
