I've been looking at lambic recipes and I see they tend to require several months in the secondary. Is it ok to bottle it after a few weeks and just let it age in the bottle, rather than occupy a carboy for several months? Is it even still fermenting at that point?

more than several months, it will be fermenting for a long time. I would say not to do what you are proposing. If there were an easier way to do it, people would do it that way.
