Soooooo, I put five and a half gallons of raw cider in the six gallon Carboy with one and a half pounds of brown sugar and champagne yeast about a year and a half ago and pretty much just neglected it ever since. When I decided to bottle it about a month ago the airlock was completely dry, and I decided to to try to bottle carbonate the Apfelwiein. I added some cane sugar and bottled. I waited a week, then tried some, and no carbonation. I figured the yeast had died and it would all be still. Well last night I cracked a bottle and much to my surprise I got a nice PSSHHHTT and bubbles. Poured into a glass and boom! Carbonation! Not only does it taste great, it'll put a hurtin on you. So glad I didn't just dump the stuff after seeing the airlock was dry!!
