i want do make a nice honey beer what type of beer would i use and how much honey would i use? can i use any type of honey,
just doing a regular size batch 23litres which i think is 5 gallons-not 100% sure any info would be great!
 
You can use any type honey. If you want to get any of the honey flavor add it at flame out.
Honey ferments quite completely so it tends to increase alcohol and makes the beer lighter. I've seen it and used it in many recipes from a very light ale to Porters.
What type beer were you thinking of?
 
Morebeer has a honey pale ale that they sell as an extract and all grain kit. They use 3 pounds of honey added with 15 minutes left in the boil. I have not done it but people say it is pretty good.
