Thoughts on this extract saison for FL heat?

Tweeked from another recipe that sounded tasty. Here's what I am contemplating for next Sun. Looking for something to brew here in FL as I don't have a fermentation chamber.

Here's what I've got so far:
Original Gravity: 1.042 (1.040 1.070 )
Final Gravity: 1.011 (1.008 1.016 )
Color: 4.0 (3.0 - 8.0)
Alcohol: 4% (4% 8%)
Bitterness: 27 (20 40)

Ingredients:
1.0 lb Vienna Malt (30 min steep @ 150F)
0.4 lb Flaked Wheat (30 min steep @ 150F)

3.0 lb Pilsen Light DME (60 min boil)
1.0 lb Wheat DME (60 min boil)
0.8 oz Brewers Crystals (60 min boil)
4.1 oz Willamette Hops (60 min boil)
0.25 oz Styrian Golding Hops (15 min boil)
0.25 oz Strisselpalt Hops (15 min boil)
0.75 oz Styrian Golding Hops (1 min boil)
0.75 oz Strisselpalt Hops (1 min boil)
1 tablet Whirlfloc (15 min boil)
1 vial White Labs Yeast 566 Saison II
 
Looking for input and only 17 views. Guess I am not part of the good ol network yet? :rolleyes:
 
What size batch? Seems like a lot of hops for a Saison. Also I would think that is a partial mash not a straight extract brew.
 
5 gallon batch. Noob here so not familiar with all terms.
I thought extract included any steeping grains.
4.1 oz Willamette Hops (60 min boil) should be 1 oz Willamette Hops
 
Ok, 1oz makes way more sense. In my opinion Saisons shouldn't have much hop flavor and in general are not highly hopped beers. I don't think I have ever used more than 2 oz total in a Saison.(1oz bittering and 1oz around 15-5m) The malts and yeast flavors should come through. Saison is such a broad style it may still be in style. If you are not, no big deal.

I believe Vienna malt should be mashed. I am not sure it would be a big deal if it wasn't. Hopefully a more experienced brewer can help you with that one.
