Looking into finding a probe I could simple put into pot from top, wire and all. I want this because I want to use my temperature control (pid and ssr or love) to run my heating element and my fermentation chamber.
 
Most people use a thermowell through the side of a pot, but there is no reason you couldn't encase your Ranco or other probe in a piece of 1/4" stainless tubing, sealed at one end. Then you could just hang it into the kettle with a spring clamp.
 
I use a section of 1/2" rigid copper pipe capped at one end as a vertically mounted thermowell.

Then I guess my question would be - does the Ranco *require* a thermowell (?), or can I toss the probe + wire into the HLT
