Looking into finding a probe I could simple put into pot from top, wire and all. I want this because I want to use my temperature control (pid and ssr or love) to run my heating element and my fermentation chamber.

Most people use a thermowell through the side of a pot, but there is no reason you couldn't encase your Ranco or other probe in a piece of 1/4" stainless tubing, sealed at one end. Then you could just hang it into the kettle with a spring clamp.

So, instead of the stock RANCO probe, you replace it with that ? No thermowell required (?)..
I think this is what I am looking for to regulate temp in my HLT. Water is heated with bucket heater, which could be controlled by Ranco..

I don't think the RANCO's are compatible with RTD probes.
