So I was wanting to brew a dark strong tonight and then a golden strong tomorrow. I started my yeasts for my dark last night and started my golden strong yeast this morning. well with out even thinking i threw together my grain bill for my golden" 1.090" and im already mashing that. so to get the the point. I was wondering what everyone thinks, should i just pitch anyway even though ill be really under pitching. or throw it in my chest freezer/ fermentation chamber and bring down the temp quick and pitch tomorrow when the count is better.
 
Sure, you can put it into the freezer. Don't underpitch it, certainly. Get it down to as low as you can, but not frozen of course. Be good about your sanitation. Look up "no chill" for specific pointers.
