I have currently thrown my cider into my secondary and was wondering a few questions.
I was going to keep it in the secondary for about a month or so, maybe longer.
1. What temperature should I be keeping the room at. I am using an ale yeast.
2. How long should I be keeping it in the secondary, I am not planning on bottling it as I have a c02 setup (I will be force carbing it) and cornies, but I would like to be able to age it. What kind of advice do you recommend for aging if you are not bottling.
