From the Northern Brewer catalog:

Chinook

Typical alpha: 11.0 - 13.0%. Best used in low-bitterness beers; overuse results in coarse, harsh bitterness. Occasionally used as an aroma hop. Minimum 60 minute boil recommended.

This seems kind of strange...use a high alpha hop only in a low bitterness beer? :confused: The BC recipe for Sierra Nevada Celebration Ale calls for 1 oz. Chinook for bittering...is SNCA really a low bitterness beer at 47 IBU? :confused:
 
What I get out of that statement is just not to overuse it. Too much of chinook as a bittering hop would create that real harsh bitterness where if it is used sparingly for "low bitterness" it would be fine.

I think I just confused myself even more. :rolleyes:
 
Too much chinook really bites. It will take the enamel off of your teeth! And in the PWN anything under 75 IBU is training wheels:D
