You got me! Thanks for posting, I am going to design a "Harvest Ale" with ingredients I actually harvested (pumpkins, hops, yeast and unmalted grains making up a small percentage of the bill). Your spice ideas are helpful!
 
Where did you get the idea to add a variety of pumpkin, squash, sweet potatoes?

I like the idea but am curious as to how the flavor and aroma will work with the hops, brown sugar and maple syrup. I look forward to reading about your results.

your recipe looks pretty good, I like the variety of squash and potato!
 
Darn it! I thought this was going to be a "Hate on Pumpkin beer" thread. I effin' HATE pumpkin beer. Just the idea gives me the creeps. Why do that to your poor, innocent beer? Bake a pie instead!;)

i remember once i did a pumpkin ale... damn never had a stock mash like this. A lot a fun!
 
I used 1# of rice hulls. Brew went very smoothly. No stick sparge at all. I even use a RIMS system. Used a little extra water. Put 3/4 of the canned stuff in the mash and saved the rest for the boil. When sparge was done, we picked out some of the pumpkin chunks and threw them in the boil also. Put the chunks and canned stuff in my hop bag.
I read somewhere that the squash and potato give off more flavor than pumpkin. Since I had a whole pumpkin I figured I'd give it a whirl...

Racked to secondary today. Added 4 oz maple syrup, 1/2 Tbl pumpkin spice and 1 vanilla bean to each carboy.
The S-04 carboy is quite dark (looks almost black) and fairly clear. The S-05 carboy is murky and a bit lighter on color (dark brown). Interesting color difference based solely on the yeast. The S-05 did attenuate more than the S-04. S-05 is also tasting better at this point. Had to add more spice. It was quite bland. Try again in 2 weeks...
 
SWMBO and I popped a couple of these open tonight. Very good beer. Spices are there but no where near overpowering. Next time I will double the pumpkin (since we had no sparge issues) and add a little more spice...
