NB white pyment—can it be fermented to dryness

With apologies to those who also read the Northern Brewer Homebrew Forum...

I have brewed many beers, and I just started trying my hand at mead. I have a question about the NB white pyment kit. It starts with "Curt & Kathy's Sweet Varietal Mead" and then adds grape concentrate. Here are the ingredients:

  • 15 lbs orange blossom honey
  • 1 can (46 oz) Alexander's Liebfraumilch grape concentrate
  • 2 pkgs Lalvin 71B-1122 Narbonne yeast
  • 2 oz Go-Ferm Nutrient
  • 4 small sachets of yeast nutrient added on subsequent days

My OG was 1.15!

My questions are these: how dry can I get this pyment to be? And, will it be possible to make it in a sparkling style?

Finally, are commercial pyments available for tasting. I normally taste beer styles before I brew them, but I haven't seen many meads/cysers/pyments...

BTW, the fermentation is in its 2nd day and going gangbusters.
