So I am soaking cacao nibs in vodka before putting them in the secondary and it looks like pretty much all the vodka has been soaked up by the nibs. As it was, not all the nibs were submerged, I just stirred them from time to time but there's pretty much no liquid vodka left. Should I add more vodka or is it good enough?

Same thing goes for some unsalted roasted peanuts I have soaking in vodka. Any help is appreciated. Thanks!

I think you are OK. I do this with hop pellets in my Session IPA - there is not enough alcohol in the base beer to extract the aroma compound. I add the vodka and eventually is becomes a very thick paste. However the ethanol is doing its job. After letting it sit for a while I dump it in as my dry hop. Works great
