Krausen giving off flavors

Just finished reading Brew Chem 101, learned quite a bit. But it was mentioned that when the krausen falls back in, it creates off flavors, and should be removed through a blow-off tube (or other sanitary procedure). Any thoughts/ validity to this?
 
My thoughts would be how do you explain so many on here making great beers without blowing off the krausen. Doen't seem to hold much air.
