- Crystal comes through slightly and Cascade hops gives it a nice bite.
This turned out to be really tasty! It needs a little bit of conditioning (for me in the keg, about 3 weeks). Cascade comes through nicely for a nice piney, citrusy bite. It was supposed to be an IPA (at least 1.056 OG), but I didn't hit my OG so I called it !IPA (for the computer science geeks, ! means "not").
I will brew this again, but with some slight changes. I will increase the batch size to 6 gals to account for hop absorption during the boil. I'll also increase the crystal to 15% of the grist which it seems to me many of the pros are doing to get some nice maltiness and residual sweetness in their IPAs. To keep the color similar, I'm going for a mix of C-75 and British carastan (C-37) since it's what I have on hand. I'm also reducing the IBUs slightly to 75 and increasing the OG a bit:
