I've saved up a dozen or so Lindeman's Lambic beer bottles. I've noticed they are very heavy compared to a standard bottle and also that lambic beers are carbed up quite a bit more than standard beers. So here's the question, could I carb some cider up to champagne level (4 volumes give or take)? I'd plan on using a plastic stopper with a wire cage, just like you would on a standard champagne bottle.

I'd say you could. If you want to cap those Lambic bottles, though, you need to get special Belgian caps and make sure your capper can actually use those caps.
