Hi, I don't have a mash-tun handy today, and I want to figure out how to all-grain without one. What is this style of brewing called? I am hoping to find a thread that will break it down real simple for me so I don't get the watery garbage that resulted from my first All-Grain attempt. Thanks, for your help!
 
If you can use some very large grain bags, you could do "brew in a bag" (BIAB). Or, with the buckets set up, the zapap system. That is outlined by Charlie Papazian in "The Joy of Homebrewing". I'm sure you could easily find the diagrams online for it.
