My grains (extracts) look like this (for 5.5 gallon batch):

3.75# Cooper's English Bitter (hopped)
3# Amber DME

That's just light on the gravity at a 1.048. Would adding 3/4# matlo dextrine be alright?

Also, can I use it as starter DME?
 
Maltodextrin will add some body and raise the gravity, but it will not be fermentable and will not add any maltiness or sweetness.
