Needing some advice from those who have successfully brewed this sort of beer. I don't know what bourbon to use. I've read not to use anything too spicy, but haven't heard of exactly which bourbon would pair best with coffee in a stout. Any suggestions?

Makers Mark is pretty popular. It's got really nice vanilla notes that always pair well with a stout.

thanks for the suggestion. i picked up a bottle of it, and can't wait to try it out.
