Just got a new kit for Christmas this year and decided to brew a Belgian Tripel with it...in my mad excitement to get going, I neglected to read the full instructions that recommended I use a yeast starter...I used only one of the recommended Wyeast smack packs for a five gallon brew.
The OG was 1.076...the fermentation seems to be going well...Hydrometer reading last night was 1.032 @ 70 degrees.
Am I going to have problems with carbonation or a sweet taste? If so, what can I do to prevent this before racking to secondary or before bottling?
