I might be wrong but I think its actual rice...not instant rice, but regular rice.
there's also rice syrup solids that's a liquid, like malt extract. probably a little different than using a solid ingredient.

Rice solids is a dehydrated version of Rice syrup. Its kind of like DME, already converted. You should be able to find it 8oz to one pound bags. This is from AHBS: Rice Syrup Solids
