hey guys.
I racked my strawberry wine into secondary about a week ago.
I used fresh strawberries in a fine jelly bag in the primary. I hung the jelly bag for a couple hours to let it drip out and no squeezing took place.
then i siphoned the must to my primary leaving a whole bunch of lees behind in the primary. About 2" of lees. Seemed like allot to me.
Now here we are in the secondary with 2+" of lees after about 2 weeks. The yeast is still doing its business and creating CO2.
Should i rack off the lees now or let it go. I am afraid its going to affect my flavor.
I put that sticky not there about a week ago to see if the lees would settle some more. As you can see, it was very minimal.
