I'm taking pathogenic microbiology this semester, flipping through I came to chapter 25: Microorganisms and food . . . there is nearly a whole page dedicated to explaining the process of brewing beer and how yeast plays a role. They explain malting, mashing, hops and ale and lager yeast. They even use the term "green" beer! I find this to be awesome.

The book is Microbiology: A systems approach by Cowan and Tolaro
 
They should have included samples with the book. That's awesome though.
 
It is always fun to find stuff like that. When I took my business capstone class last semester our book had a 5 page case on the New Belgian Brewery that was a pretty fun read.
