Hey everybody. I currently have my first wild beer in the secondary. It's been in there since about September '10 and is smelling and tasting sour. I added some oak spirals about three weeks ago and was planning on transferring to a keg in another three weeks, force carbing and then bottling for long term aging. However just this week I have begun to see what looks to be a pellicle forming. Assuming there is a full pellicle present when I am planning to keg this beer in three weeks, can I go ahead with it or should I wait until the pellicle falls on it's own before racking? The spirals are supposed to be done oaking the beer after six weeks. Thanks!
