Locust is NOT the same as acacia, two totally different trees. Never used locust honey, but acacia honey is a very floral, delicate, aromatic honey; it tastes like acacia flowers smell, only better. I've got a gallon of acacia honey showmead fermenting as I type, I'll let you know how it turns out in about a year. Regards, GF.

By my reading,"The ABC's of Beekeeping: 1892"(My Da's GreatUncle was a Beekeeper), locust honey is second only to Tupelo honey in quality and flavor. Should be an excellent mead. Locust honey I've had made you think: Spring!
