Well I had been out of brewing for a long time, and I still have a ton of older leaf hops. They have been in the chest freezer and packed either in nitrogen sealed bags of vacuum sealed. Should I just plan on say a 25% increase due to the age?

Couldn't tell you what the degradation of the AA's are. I say, if it still smells good, use it, but maybe double what you use.

Here's an article I recently put together on hop storage and aging.

Your loss of alpha acid will depend on the variety (see the article for a table) hop stability index, age and storage conditions. Once it drops below 50% alpha acid it is time to chuck it.

A few hop varieties might survive from 2004, but most would probably be past their prime by now.

You might try making some Belgian sour beers that use aged hops. If they dont smell cheesy, you're good.
