I'm curious to the HB's experience with Cooper's Ale Yeast. I've been using it on and off for a few years now, and even have it slanted. I found a particular package a few years ago the ferments so darn vigorous its kinda scary. I brewed with it again yesterday morning, and my fermenter was bubbling and foaming in 3 hours after pitching. The beer is OK if you ferment is cool enough ( ~68F ) and acceptable when fermented warmer. I just never seen yeast consistantly take off running in 2-3 hours after pitching. I've only have used a handfull of yeast strains, so I don't have much experience with different yeast, but none of my other yeast go nuts on wort like coopers. Any insights?
