6lbs White Sorghum
1.25lbs dark rice syrup
1lb malto dextrin
1lb roasted buckwheat steeped
.5 oz nugget 60 minutes
1.5 oz cascade 10 minutes
1.5 oz cascade 2 minutes

5 gallon batch

I am brewing this for my intollerant friends.

make sure the rice syrup and yeast are gluten free and you ought to be fine

I would just mention in addition to those things, that 1lb is a crapton of maltodextrin. You will end up with a very full bodied beer with that much in there.
 
Should I cut the maltodextrine down to .5 lb?

What kind of beer is it? Looks to me like sort of an APA, which can be dry or sweet. Which do you like better?

If dry, cut it entirely. If sweet, use the whole half pound. If in between... Here is a recipe very similar to yours: http://brew.dkershner.com/2009/gf-haus-ale/

Note where my FG ended up, do you want yours higher or lower? Adjust malto from there.
