Never used these before but I'm brewing a saison this week and thought they may be a nice addition. When do they get added? Crushed or whole? How much to use? What to expect ?
 
You add them in the boil, usually at the end so not to dissipate the volitile flavor and aroma oils.

Like any dry spice or herb, you should always crush them to release the essential oils.

They add a unique pepperiness to wits.
 
I did mine like revvy said in a wit. I think it was the last ten minutes. it has a nice little pepper flavor, but it's not strong at all
 
I'm not really sure when the best time to add them is. I split the addition in half and add some at 10 minutes, and the rest at flame-out (hedging my bets).

I like to add about a gram to my Saisons.
